New Year, New You: February Update

As I write this, I am sitting on my front porch watching the sun set.  What a gorgeous day it has been!  I am so grateful for warmth and sunshine!  Had the doors open and the cats loved being able to run in and out all day.  Since it’s almost mid-March I thought I’d give you a recap of new things for February.  Better late than never, right?  🙂

The big change, of course, has been restarting my T-Tapp routine.  You can read more about my T-Tapp journey here.  Total inches lost for February was…drumroll please…14 1/2!  I have to say that I am somewhat disappointed in myself though.  I only actually worked out 6 times for the whole month.  🙁  Imagine what it could have been…sigh…But this is a new month!  I will do better!

The other major change in Feb. was the decision to not use the microwave anymore.  Most of the time it hasn’t been an issue, but I do miss the convenience of the spur of the moment baked potato!  I really hate heating up my oven to bake one potato.  I am looking at replacing the microwave with a toaster oven/convection oven.  It would be about the same size as my microwave, but much smaller than my oven, so I wouldn’t mind baking just one potato as much.  Of course, I could always bake more than one and then shred or cube them to freeze for other meals liked Loaded Baked Potato Soup or breakfast items like hash browns or fried potatoes.  Hhhhmmmm…definately something to think about.

That just about sums up the month of February.  If I remember anything else, I’ll add them to the March re-cap that will be coming up in about 3 weeks…You know, they say that the older you get the faster time flies by.  While I’m not really sure who “they” are and why I should believe anything “they” tell me, I can’t help but wonder what it’s going to be like in another 20 years…

Dinner Tonight

I was gone for 3 days attending a family wedding in Phoenix.  When I came home, I brought a nasty sinus infection back with me.  Not sure what I was thinking there…Anyway, today is the first day I have actually felt good in almost 2 weeks.  So of course, I spent the day in the kitchen!  Well, not all of it.  🙂  But since it was stormy and rainy it seemed like the thing to do.

Dinner menu for tonight:

Beef and Vegetable Soup

Cracked Wheat French Bread

Lemon Poundcake with home canned peaches.  Yummy!

Right now the soup is in the crockpot, the poundcake is in the oven and the bread is rising on the cabinet.  Wow my house smells good.  I’m so glad I can smell again!

I’m not sure if Beowulf and the Village People survived my unintentioned neglect, though.  Right now Beowulf (my sourdough starter) has been newly fed and is snuggled up to the crockpot.  And the Village People (my water kefir grains–there’s a lot of them and they look funny 🙂 ) have been submerged in a fresh batch of sugar water in hopes of having a lemon-lime soda-y beverage soon.  I’ve only gotten one batch of water kefir so far–hope these Village People aren’t a one-hit-wonder…Y-M-C-A…But I digress…

Things are slowly getting back to normal, although I haven’t had the energy to tackle the bathrooms yet.  Maybe tomorrow?

Thankful Thursday #9: Family Weddings

Today I am thankful that I was blessed to attend the wedding of my beautiful niece Jessica and her adoring Derek.  If ever there was a match made in heaven, this is it.  And it is a marriage with Jesus as the center and foundation.  What joy to witness!  My heartfelt congratulations to Mr. and Mrs. Derek Rogers.  May Jesus continue to be the center of your relationship, and your anchor in every storm!  Much love.
